Sophia's Smoothie (Mixed Berry)

Ingredients:

  • 1 Cup Frozen Mixed Berries
  • 1 Banana
  • 1 Cup Spinach
  • 2 TBSP Almond Butter
  • 1 TBSP Ground Flax
  • 2 tsp Ginger or 1/2" inch
  • 1-1 1/2 Cups Non-Dairy Milk

Directions:

  • Blend until smooth!

COOK TIME: 5-10 MINUTES

SERVES: 1-2

Shakti's Treat     (Cacao and Almond Butter)

Ingredients:

  • 1 Banana
  • 2 TBSP Cacao Powder
  • 1/4 Avocado
  • 1-1 1/2 Cups Non Dairy Milk
  • 1 TBSP Chia Seeds
  • 2 TBSP Almond Butter
  • Cacao Nibs to sprinkle on top!

Directions:

  • Blend until smooth!

COOK TIME: 5-10 minutes

SERVES: 1-2

Lakshmi's Soup (Carrot Ginger)

Ingredients:

  • 1–2 tbsp extra-virgin
  • olive oil
  • 6 carrots, cut into chunks
  • 1 medium onion,
  • cut into chunks
  • 6-inch piece fresh
  • ginger, peeled and
  • cut into chunks
  • 1 tsp sea salt
  • 4 cups water or stock
  • Fresh parsley

Directions:

  1. Heat oil in stockpot on medium heat.
  2. Place carrots, onion, ginger, and salt in the heated pot.
  3. Add water or stock, bring to a boil, and cover.
  4. Simmer on low heat for 2 5 minutes,or until carrots soften.
  5. Transfer soup into a blender or food processor, adding water if necessary to achieve desired consistency.
  6. Transfer to a soup bowl and garnish with fresh parsley.

COOK TIME: 30 minutes

Serves: 4
